I have laid the three inch tile over the shower pan per your video
now I need to know should these be grouted before installing the 12
inch tiles on the walls or do these get grouted at the same time?
Also the wall tiles will be installed at an angle on greenrock,
should I use the same thinset as the floor or what would you recommend?
When do I use caulking or do I?

I would wait until I grout the walls and then grout the floor.
About the thinset, you will need to use ceramic tile mastic,
it's for gluing tile to sheetrock.
The Thinset will not hold the tiles to sheetrock.
And Yes always use silicone calking.
